Homemade Coca-Cola Cake

IMG_1297One of my family and friends favorite cakes that I bake is a homemade Coca-Cola Cake. I do not make it very often, but I do like to make it for special occasions or when we have company! Although it does require several ingredients, it’s fairly easy to make, only requires minimal baking time, and it tastes delicious!

For the cake, you will need:

1 cup Coca-Cola

1/2 cup vegetable oil

1  stick margarine

3 tablespoons of cocoa

2 cup sugar

2 cups self-rising flour

1/2 teaspoon salt

2 eggs

1/2 cup buttermilk

1 teaspoon baking soda

1 teaspoon vanilla

In a saucepan, bring the Coca-Cola, oil, margarine, and cocoa to a boil. In a separate bowl, mix the sugar, flour and salt. Pour in the boiling liquid and beat well with your mixer. Add the eggs, buttermilk, baking soda and vanilla and beat well. Pour into a greased and floured sheet cake pan and bake at 350 for 35 minutes. (Baking time varies, depending on your oven! You may need to cook yours for a shorter or longer amount of time.)

For the icing, you will need:

1 stick margarine

3 tablespoons cocoa

6 tablespoons milk

1 teaspoon vanilla

1 pound confectioners sugar

In a saucepan, combine the butter, cocoa, and milk and heat until the butter melts. Beat in the remaining ingredients with your mixer. Spread immediately on the hot cake. Serve warm (or let cool before serving) and enjoy! (It tastes especially good when its warm with a bowl of vanilla ice cream!)
