Broccoli and Cheese Casserole

Broccoli and Cheese Casserole has always been one of my favorite side dishes to make, and it tastes especially good with Ritz crackers! It’s really easy, and only requires 30 minutes of baking time!

You will need:

1 lb of frozen broccoli (I prefer to buy the florets instead of the cut broccoli)

1 egg

1/2 cup mayonnaise

1/2 can of cream of mushroom soup (I prefer the Campbell’s brand)

2 tsp Lipton onion soup mix

1 tsp salt

1/4 tsp pepper

3/4 cup grated  Sharp Cheddar cheese (You will need additional cheese for later.)

*Preheat oven to 350 degrees F.

Begin by cooking your broccoli on the stovetop for about 10 minutes, once it starts to boil. Drain the broccoli. Add in all the other ingredients. Mix well. Pour into a greased 8×8 glass casserole dish. Bake for 25 minutes. Remove from the oven and top with additional cheese. (I like to cover the entire top with cheese.) Place back in the oven and bake for 5 minutes. Serve with Ritz crackers, and enjoy!
